This simple no-knead dinner roll recipe makes soft, fluffy rolls with minimal effort. No special equipment or hard-to-find ingredients are required—just basic pantry staples and a little patience while the dough rises.

INGREDIENTS NEEDED:
Makes 6 rolls
- 2 cups (approximately 300 g) All-purpose flour (I used organic unbleached flour)
- 2 Tbsp (30 g) sugar (I used organic unrefined sugar)
- 1 tsp (5 g) salt
- 140 ml milk, slightly warm
- 1/2 tsp active dry yeast
- 50 g butter, softened
- 1 egg, at room temperature
METHOD:
Step 1 — Prepare the dough
Activate the yeast: combine 2 tbsp (30 g) sugar and 1/2 tsp active dry yeast in 140 ml of warm milk. Stir to dissolve and leave for 5–6 minutes until foamy.
In a large mixing bowl, add the dissolved yeast, then add the flour, salt, softened butter and the egg. Stir until the ingredients come together into a soft, slightly sticky dough that pulls away from the sides of the bowl. The dough will be elastic even without kneading.
Step 2 — First proofing
Transfer the dough to a lightly greased bowl, cover with plastic wrap or a clean towel, and let it rise at room temperature for 2–3 hours, or until doubled in size.
Step 3 — Shape the dough
Turn the risen dough onto a lightly floured surface, gently deflate it, and divide into six equal pieces. Shape each piece into a smooth roll and place them in a greased pan, leaving a little space between each roll for expansion.
Step 4 — Second proofing
Cover the pan and let the rolls rise again at room temperature for about 40–45 minutes, until puffy.
Step 5 — Bake
Preheat the oven to 375°F (190°C). Bake the rolls for 20–22 minutes, or until they turn lightly golden brown on top.
Remove the pan from the oven and brush the hot rolls with melted butter for a glossy, rich finish. Serve warm.
