Grandma’s Classic Goulash Recipe for Comforting Weeknight Meals

Mom’s Goulash Recipe is a hearty, flavor-packed one-pot meal that’s easy to make, reheats well, and freezes perfectly for quick dinners. Simple ingredients come together to create comfort-food magic with minimal cleanup.

Mom's Goulash Recipe

This recipe is straight from my mom’s well-worn recipe box. It starts with ground beef cooked with onion and celery, then builds flavor with tomato soup, kidney beans, and a touch of hot tomato sauce. Finish with pasta simmered right in the pot for an easy, satisfying meal.

How to Make Mom’s Goulash

I make this regularly because it’s reliable, comforting, and simple. Everything cooks in one large skillet, which keeps cleanup to a minimum. The aroma of beef, onion, and celery browning together fills the kitchen and signals dinner is coming.

Start by sautéing chopped onion and celery with the ground beef over medium heat. Season with salt, pepper, and a splash of paprika. Use a flat-edged spatula to break the beef into small pieces as it browns so the vegetables and meat cook evenly without burning.

Once the beef is browned, add tomato soup, drained kidney beans, the hot tomato sauce, and uncooked pasta. Stir everything together, cover, and simmer gently for 30–45 minutes until the pasta is tender and the flavors have melded. Stir occasionally while it simmers and enjoy lifting the lid to smell the progress.

Substitutes and Variations

This recipe adapts easily to what you have on hand. Ground turkey or chicken can replace beef for a lighter version, and veal would also suit the traditional Hungarian definition of goulash. Any short pasta works—elbows are classic, but rotini or other shapes are fine.

Kidney beans vary in color, but any drained canned kidney beans will work. If you don’t have El Pato hot tomato sauce, use regular tomato sauce and add crushed red pepper or hot sauce to taste for heat.

What to Serve With It

Mom’s Goulash is flexible—serve it on its own, with a green salad, or alongside buttered crackers. Garlic or Parmesan toast pairs nicely, and warm cornbread is a great comfort-food match. A dollop of sour cream or shredded cheese on top is a nice finishing touch.

Make-Ahead, Freezing, and Reheating Tips

I often double this recipe and freeze single-serving portions. Store them in airtight containers and they’ll keep well for about three months. To reheat straight from frozen, place a serving in a small pot with 2–3 tablespoons of water, cover, and heat on low. Stir frequently to break up the frozen block and add a little more water if needed. Once thawed, raise heat to medium until it simmers.

For refrigerated leftovers, the microwave works well. Add about 2 tablespoons of water to the plate and cover it while heating for roughly one minute, stirring halfway through. The steam helps keep the meat and pasta moist. Check and heat until piping hot.
