How to make this Luscious Chocolate Glaze

This glaze is made in one bowl and takes only a minute or two. You can melt it either in the microwave or over the stovetop; below are microwave instructions and a stovetop option in the tips section.

Combine the following ingredients in a microwave-safe bowl:

  • 3 oz (85 g) dark chocolate (minimum 85% cocoa)
  • 1 oz (30 g, about 2 tablespoons) unsalted butter
  • 2 teaspoons water
  • 20 drops (or to taste) vanilla stevia

Heat on high for 30 seconds, then stir until smooth. If needed, heat an additional 10–15 seconds and stir again. Let the mixture stand a couple of minutes at room temperature if any chocolate pieces remain until everything is fully melted. The result should be a glossy, slightly thick glaze ready to use.

Why this recipe works

Tips for variations

For a dairy-free or vegan option, replace butter with 1 tablespoon of extra-virgin coconut oil (more makes the glaze too runny). Butter-flavored coconut oil can mimic the buttery flavor.

Swap vanilla stevia for unflavored stevia plus a dash of vanilla extract, or use monk fruit liquid sweetener. Avoid granular sweeteners or powdered formats that can leave a gritty texture.

To lower carbs further, use 100% baking chocolate and increase sweetener to taste, since unsweetened chocolate is very bitter.

If you prefer not to use a microwave, melt the ingredients in a small saucepan over very low heat, stirring constantly and removing from heat at the first sign of burning. Chocolate heats quickly, so keep the temperature low and stir along the bottom of the pan.
