The best papayas often come from Hawaii. When fully ripe they develop an exceptional sweetness and vibrant color.
I picked up a few Kahuku-grown papayas at the farmer’s market. Both the common orange-fleshed variety and the deeper red-fleshed type—often called Red Papaya—have orange and green-speckled skins. The red-fleshed ones taste especially sweet and fragrant to me.

- 3 cups diced ripe papaya
- Juice of 1/2 lime
- 6 oz plain nonfat Greek yogurt
- 1 tsp finely grated lime zest
- 1/4 to 1/2 tsp finely grated fresh ginger
- 1–2 tsp honey or sugar, to taste
- 1/4 cup granola
- Toss the diced papaya with lime juice and set aside to allow the flavors to meld.
- In a small bowl, whisk together the Greek yogurt, lime zest, grated ginger and honey until smooth.
- In each of two glasses, layer one-quarter of the papaya, half of the yogurt mixture, then another quarter of papaya. Finish each parfait with about 2 tablespoons of granola for crunch.
- Chill briefly or serve immediately for a cool, satisfying treat.
