I discovered this citrus-garlic flank steak recipe on Closet Cooking and adapted it for a simple, flavorful weeknight meal. After marinating the steak for several hours the flavors meld into the meat, producing a tender, juicy result with bright citrus notes and a gentle garlic kick. This steak pairs well with fresh sides like a citrus-honey fruit salad or a black bean salad with avocado and tomatoes for a complete, balanced plate the whole family will enjoy.
Citrus-Garlic Flank Steak
Ingredients:
- 1 lb flank steak
- 2 tbsp vegetable oil
- ¼ cup fresh orange juice (about 1 orange)
- 2 tbsp lime juice (about 1 lime)
- ½ jalapeno, finely diced
- 2 tbsp cilantro, chopped
- 3 cloves garlic, minced
- ½ tsp cumin
- ½ tsp oregano
- ½ tsp salt
- ½ tsp pepper

How to Make Citrus-Garlic Flank Steak
In a large resealable bag combine the vegetable oil, orange juice, lime juice, diced jalapeno, chopped cilantro, minced garlic, cumin, oregano, salt, and pepper. Seal the bag and press gently to mix the marinade. Add the flank steak, squeeze out excess air, and refrigerate for up to 6 hours to let the flavors penetrate the meat.
Remove the steak from the refrigerator about 20 minutes before cooking to come closer to room temperature. Preheat a grill or a grill pan over medium-high heat and lightly coat with cooking spray or oil so the steak doesn’t stick. Place the steak on the hot surface and cook 3–4 minutes without moving it to develop a good sear. Flip and cook another 2–3 minutes for medium-rare, or adjust the time to reach your preferred doneness.
Transfer the steak to a cutting board and let it rest for 5 minutes so the juices redistribute. Slice thinly against the grain for the most tender bites. Serve immediately with your choice of sides and enjoy.
