What is a Turkey Club Sandwich?
The Club sandwich is one of the great American sandwich classics. Its origins are often traced to New York — examples appear on menus as early as the late 1800s — and the defining characteristic is a third slice of bread in the middle, creating a multi-decker sandwich. The modern Turkey Club typically layers roasted turkey with crispy bacon, lettuce, tomato, and mayonnaise between three slices of toasted white bread. Some versions add cheese or other condiments, but the traditional combination—turkey, bacon, lettuce, tomato, and mayo—remains the most beloved.
Ingredients
The amounts below make one generous sandwich. Scale up as needed for more servings.
- 4–5 slices thin-sliced bacon, cooked until crispy
- 3 slices hearty white bread (avoid very airy breads; use a sturdy country-style white)
- 2 tablespoons butter for toasting
- 2–4 tablespoons good-quality mayonnaise
- 3 ounces sliced roasted turkey (leftover Thanksgiving turkey or quality deli roast turkey)
- 2 leaves butter lettuce, washed and dried, torn to fit the bread
- 2–3 thick slices ripe tomato
- Salt and freshly ground black pepper

How to build a Turkey Club Sandwich
- Cook the bacon until crisp, then drain on paper towels. Once cool, break strips in half if needed to fit the bread.
- Preheat a cast-iron skillet or frying pan over medium heat. Butter one side of each bread slice and toast in the hot pan until golden and warm. Repeat for all three slices.
- Spread a generous layer of mayonnaise on one toasted slice. Top with torn butter lettuce, then tomato slices. Season the tomato with salt and pepper.
- Spread mayonnaise on one side of the second slice and place it mayo-side-down on the tomato layer to form the middle layer.
- On the remaining toasted slice, spread more mayonnaise, then layer the turkey and top with the crispy bacon.
- Place the bacon-topped slice mayo-side-down to complete the sandwich. Secure the stack with toothpicks at the four corners about an inch in, then cut into quarters.
- Serve immediately with fries, potato chips, or your preferred side.
Variations on the Turkey Club Sandwich
The Classic Turkey Club is versatile. Here are simple ways to customize it while keeping the spirit of the sandwich intact:
- Avocado — adds creaminess and a fresh flavor contrast
- Pickles — for tang and crunch
- Ham — layer thin-sliced ham alongside the turkey for extra savory flavor
- Roast chicken — a great substitute for turkey if preferred
- Mustard — a smear of Dijon, whole-grain, or yellow mustard adds brightness (Dijon pairs especially well)
- Swiss or another mild cheese — place a slice with the turkey for a richer sandwich
- Lobster or crab — for a decadent twist, substitute lobster or crab meat for the turkey
Best side dishes
Classic sides pair perfectly with a Turkey Club: crispy French fries, kettle-style potato chips, or a simple potato salad. A crisp green salad also balances the richness of the sandwich.
