This Meatball Skillet is a warm, satisfying dish featuring pan-fried meatballs alongside pillowy gnocchi and a peppery handful of arugula. Simple ingredients combine into a comforting plate of savory herbs, tender pork, and crisped dumplings that everyone will enjoy.

I originally developed this recipe for a family food manufacturer in the Chicagoland area called Chateau Foods. Since they are no longer in business, I now use frozen gnocchi in place of their mini potato dumplings—an easy and delicious swap.

Each meatball is seared to develop a deep, savory crust, while the gnocchi stay soft inside and gain a bit of crisp when sauteed. The arugula adds brightness and a peppery contrast, and the pan juices and broth pull it all together into a light sauce that clings to every bite.

This skillet delivers a balanced mix of textures and flavors, making it a great option for weeknight dinners or casual gatherings.

Pan Fry For Ultimate Flavor

With so few components, maximizing each ingredient’s flavor is important. For this version, the meatballs are pan-fried to create browned bits and concentrated pork flavor that then season the simple broth used later in the skillet.

When frying, watch for the moment the meatballs release naturally from the pan—this is the sign they’re ready to turn. If they stick, give them a little more time to brown on that side before flipping.

Adjust the heat as needed; stovetops and pans vary, so note the time and temperature you use the first time so you can replicate it later. Once you get the hang of it, the method becomes straightforward and rewarding.

Potato Dumplings Or Gnocchi

If mini potato dumplings are hard to find, frozen gnocchi are an excellent substitute and are widely available in grocery freezer sections. Either option works well with this pan-fry method and will crisp up nicely in the skillet.

The pan-frying step gives the dumplings or gnocchi a pleasant texture contrast and helps them soak up the savory pan juices.

Meatball Skillet Recipe

This Meatball Skillet is packed with savory bites and simple sauce—ideal for busy nights when you want comfort without fuss.

Ingredients

  • 1 lb ground pork
  • 1 cup powdered Parmesan cheese
  • 1 tablespoon dried Italian seasoning
  • 1 egg
  • 1 teaspoon black pepper
  • 2 cups arugula and/or spinach mix
  • Olive oil for cooking
  • 1 cup chicken or beef broth
  • 1 (16-ounce) package frozen gnocchi or potato dumplings

Instructions

  1. In a large bowl, combine the ground pork, Parmesan, egg, black pepper, and Italian seasoning.
  2. Mix thoroughly and form into roughly two-inch meatballs.
  3. Bring a pot of water to a boil.
  4. Heat olive oil in a skillet and brown the meatballs on all sides.
  5. Once browned, cover the skillet, reduce heat to low, and cook for 15 minutes.
  6. Remove the meatballs from the pan and set aside.
  7. Cook the gnocchi or dumplings according to package directions.
  8. When they float, heat the skillet and add the cup of broth. Bring to a simmer and scrape up the browned bits from the pan to flavor the broth. Using a slotted spoon, transfer gnocchi from the pot to the skillet, reserving some cooking water.
  9. Sauté the gnocchi in the skillet until edges are crisp, turning slowly so all sides brown.
  10. Add the meatballs back to the skillet with the arugula/spinach and about 1/4 cup of the reserved pasta water. Simmer for about 10 minutes, tossing gently to combine.
  11. Serve immediately, optionally topped with extra Parmesan and black pepper.
