After searching for Peep-inspired cocktails, I found few recipes that struck the balance I prefer: not overly sweet and easy to sip. I tend to enjoy lighter drinks that last — think gin and tonics, mojitos and mules — and this lemony take on a mojito hits that note. While Peeps are fun as a festive touch, I prefer to use them as a garnish rather than as the main edible attraction. This cocktail lets you indulge in a playful nod to childhood while enjoying an adult drink that’s balanced and refreshing.

The idea for a mojito-style cocktail came naturally as the mint in my yard started sprouting — more than enough to muddle into drinks. In a cocktail shaker, add half a slice of lemon, the fresh mint leaves and 1 teaspoon of sugar. Muddle gently to release the mint oils and dissolve the sugar. Add a few ice cubes and pour in the 4 oz. of lemonade. Shake well, then strain or pour the mixture over a glass filled with ice. Top with a splash of club soda for sparkle. Garnish with the remaining half slice of lemon and a yellow Peep marshmallow perched on the rim.
