Homemade Strawberry Strudels: Flaky Pastry with Fresh Filling

This easy strawberry strudels recipe is a quick, crowd-pleasing dessert. One sheet of puff pastry yields about 30 bite-sized strudels. To keep jam from running, stir in one teaspoon of cornstarch into the jam or preserves. There’s no need to cook or microwave the filling — just mix and fill. These bite-sized strudels are perfect for parties, potlucks, or an easy treat at home.

Ingredients for Strawberry Strudels:
  • 1 sheet puff pastry, thawed
  • 1/3 cup strawberry preserves or jam
  • 1 teaspoon cornstarch
  • 1 tablespoon milk and 1 tablespoon granulated sugar for the tops

Instructions:

1. If necessary, roll the puff pastry into a 15.5 × 10-inch rectangle. Cut the pastry into 3-inch-wide strips along the long side, then cut each strip into pieces about 1 1/2 inches wide across, creating small rectangles.

2. In a small bowl, mix the strawberry preserves or jam with the teaspoon of cornstarch until smooth. Place a small dollop of the jam mixture in the center of each pastry rectangle.

3. Fold the right side of the dough toward the center and pinch the edge to seal. Fold or roll the left side over and pinch that edge as well to fully seal each strudel. Arrange the filled strudels on a large baking sheet.

4. Brush the tops lightly with milk, then sprinkle with granulated sugar. Make two small slits in each strudel to vent. Bake in a preheated 400°F (200°C) oven for about 15 minutes, or until the pastry is golden and puffed. Let cool slightly before serving.
