- Dry: Drain the potatoes and pat them thoroughly dry with paper towels or a clean kitchen towel.
- Toss with oil and salt: Transfer the fries to a medium bowl, toss with truffle oil and salt until evenly coated.
- Air fry: Arrange the fries in the air fryer basket and cook at 350°F (175°C) for about 20 minutes, shaking or flipping halfway through for even browning.

Cooking tips: If you cook fries in multiple batches, place finished fries on a wire rack to keep them crisp. Depending on your air fryer model and capacity, cooking time may vary by 1–2 minutes.
Substitutions: If you don’t have white truffle oil, black truffle oil, olive oil or avocado oil will work.

FAQs
What can I serve with this dish?
These fries go well with many mains. Try them with lemon pepper chicken thighs, a gourmet burger, grilled fish like mahi mahi, or a juicy filet mignon topped with blue cheese.
Can I use a different potato?
Yes. Red, white or Yukon Gold potatoes work, but they may not crisp as much since russets (baking potatoes) have higher starch content, which yields a crispier fry.
How do I store leftovers?
Let fries cool completely before storing. Keep them in an airtight container in the refrigerator for up to 5 days. For freezing, use a freezer-safe container or bag for up to 6 months.
What are truffles?
Truffles are underground fungi that grow near tree roots. Known for their intense aroma and flavor, they’re a culinary delicacy and are typically expensive due to the effort required to locate and harvest them.
