Ingredients

  • ½ cup plain full fat yogurt
  • 1 egg
  • ¼ cup maple syrup
  • ¼ cup orange juice
  • zest from 1 orange
  • 1 teaspoon pure vanilla extract
  • ¾ cup oat flour
  • 1 cup old fashioned oatmeal
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup shredded carrots

Instructions

  • Preheat oven to 350°F. Line a regular muffin tin with paper or silicone liners.
  • Whisk together the yogurt, egg, maple syrup, orange juice, orange zest, and vanilla.
  • Add oat flour, oatmeal, baking soda, and salt; stir until combined.
  • Fold in the shredded carrots.
  • Scoop about ¼ cup of batter into each muffin cup.
  • Bake 20–22 minutes, or until a toothpick inserted in the center comes out clean.
