Fig-Infused Lemonade Recipe: Refreshing Summer Drink

This is the ultimate summer drink. I’ve been making Fig Leaf Lemonade over and over — it’s incredibly refreshing and hydrating on hot days. Make a large batch and keep it chilled in jars so you can serve it over ice whenever you like. I enjoy it in the backyard, on walks, in the park with a good book, or sitting by the river soaking up the sun.

The recipe is simple: fresh fig leaves, plenty of lemons, and a little sugar. The fig leaves add a delightful twist to classic lemonade, giving it a subtle herbal, almost tropical character. I think you’ll love it.

What does fig leaf lemonade taste like?

If you haven’t tried fig leaves before, they have a distinct flavor that’s hard to describe but very pleasant: think herbaceous fresh-fig notes with hints of coconut and vanilla. Paired with the bright tartness of lemon, the result is lemonade with a more layered, slightly tropical profile.

If you have a fig tree nearby (or a generous neighbor), pick a few young, healthy leaves any time from mid-spring through late fall. They’re perfect for infusing drinks and desserts throughout the season.

How to make it

Start by making a fig leaf simple syrup to sweeten and flavor the lemonade.

Fig leaf simple syrup:

Pick about five young, tender fig leaves from the tips of the branches. Choose leaves that look healthy and free of blemishes. Rinse them gently and let them drip dry on a clean towel.

In a saucepan combine equal parts sugar and water and bring to a boil. Reduce heat and simmer a few minutes until the sugar is fully dissolved. Add the fig leaves, cover, and let the mixture cool completely — about an hour — so the leaves can infuse the syrup. Remove and gently squeeze the leaves to extract all the syrup before discarding them.

Make the lemonade:

Combine cooled fig leaf syrup, fresh lemon juice, and water in a large pitcher. Whisk vigorously until well combined and the syrup is fully dissolved. Chill until ready to serve.

To serve, pour the lemonade over ice. Garnish with lemon slices and, if you like, a pinch of high-quality sea salt to enhance the flavors. Enjoy immediately.
