To grind the mushrooms, a coffee grinder or spice grinder gives a finer, more consistent powder than a larger food processor, though either will work. Store the finished seasoning in a shaker bottle or a sealed mason jar. It keeps about six months in the pantry.

- 1 ounce dried porcini mushrooms (or adjust to taste)
- 1 ounce dried shiitake mushrooms (or adjust to taste)
- 2/3 cup mineral salt
- 1 tablespoon red pepper flakes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon cracked black pepper
- Place dried mushrooms in a clean spice grinder or coffee grinder and pulse until very finely ground. Let the powder settle for a minute.
