It’s been a relaxed weekend at our house. On Saturday I spent the morning writing at a coffee shop, then met family and friends in the afternoon for a pleasant visit.
It’s been raining since we woke up, but the drizzle didn’t keep us indoors. Eric and I enjoyed breakfast and read scripture together before setting out on a long walk around the neighborhood, coffee in hand. The soft rain made everything feel magical; the birds were unusually active and seemed to be celebrating the weather as much as we were.
After our walk he headed to the library, and I took advantage of the rain to go for a longer run. Later I visited our new nephew and stopped by the grocery store to pick up supplies for the week.
Here’s what we’ll be eating this week:
Sunday: Spanish Wraps
Monday: Black-Eyed Pea Nachos
Tuesday: Baked Salmon with Quinoa Salad
Wednesday: Falafel Pitas
Thursday: Roasted Shrimp with Vegetable Couscous
Friday: Grilled Chicken with Potatoes and Brussels Sprouts
Saturday: Roasted Tomato and Spinach Pizza
Now it’s time for some tidying, more writing, and preparing for the week ahead. I hope you had a lovely weekend too. Do you enjoy rainy days?
